Asian-Inspired Tofu Veggie Stir Fry Recipe
If you can't get enough Chinese takeout, we have a healthy quick-fix for you! This high-protein, umami dish is the perfect comfort food for lazy movie nights at home.
Asian Sweet Ginger Sauce
- 1/2 cup coconut aminos ((or low-sodium soy sauce)) 
- 1/4 cup water (filtered) 
- 1/4 cup sesame oil 
- 2 tbsp ginger (grated) 
- 4 cloves garlic (finely minced) 
- 3 tbsp rice vinegar 
- 2 tbsp maple syrup - Stir Fry Mix
- 1 block tofu (extra firm, pressed, cubed) 
- 1 cup green beans (trimmed) 
- 1 medium red bell pepper (sliced) 
- 1 medium onion (sliced) 
- 1 cup mushrooms (sliced) 
Asian Sweet Ginger Sauce
- Combine all ingredients in a serving bowl, and whisk together. Let sit for about 15 minutes. 
Stir-Fry
- Heat and grease a saucepan. Fry tofu and veggies together with 1/3 of your sauce, until veggies are tender and tofu is golden. 
- Add the rest of the sauce and let simmer for about 5 minutes. 
- Serve over a bed of short-grain rice or rice noodles.
